NKD Living's Vital Wheat Gluten is made from the natural protein found in wheat endosperm, so is very high in protein. When added to water it becomes highly elastic so it great for low carbohydrate baking, as it provides the strength and elasticity necessary for bread and dough making. Suitable for ketogenic diets.
Recommended Use: Add to bread mixtures to increase the elasticity of the dough, use for low carbohydrate baking and vegetarian meat substitutes such a seitan.

Vital wheat gluten finally back on the shelves!
I'd prefer a smaller bag as I probably won't get through 1kg in the year, but I was so happy to see it back in stock. Off to make lots of delicious food now!

Vital for making seitan
It's good that this product is back on the Holland and Barrett shelves, as people are making their own meals with Seitan (wheat gluten with either tofu or chickpeas)
