For some people, it can be very difficult to gain weight. If this sounds familiar, this delicious and healthy sweet potato granola could help.
It’s packed with nuts, which are rich in healthy fats, and high-energy dried fruits. The oats and sweet potato provide a serving of starchy carbs.1
Sweet potato granola

Method
Step 1.
Preheat the oven to 160°C/140°C fan. Melt the coconut oil in a small pan and stir in the maple syrup.
Step 2.
Measure the oats, nuts, and seeds into a large bowl, and pour the coconut oil and maple syrup mixture over the top. Stir together.
Step 3.
Finely grate the sweet potato and stir it into the granola mixture. Divide between two trays and bake for 15-20 minutes.
Step 4.
Toss thoroughly and then add the dried fruit and honey and bake for a further 10-15 minutes or until golden.
Step 5.
Allow the granola to cool completely on the trays before transferring to a sealable bag or tub. Keeps for up to two weeks.
Step 6.
Serve with Greek yoghurt or milk, and top with mixed berries.
